inesechestnut(CastaneamollissimaBl.),alsoknownaschestnut,orChinesechestnut,andbelongstoFagaceaeCastaneaplants,anditsactiveingredientchestnutpolysaccharideshaveawiderangeofvalue.Inthisstudy,cookedchestnutpolysaccharidesandrawchestnutpolysaccharidesinYunchengXiaxianwereextractedemployingwithhotwaterextraction,acidextraction,alkalineextraction,ultrasonicextractionandcelluloseenzymeextraction.Theratesofcookedchestnutpolysaccharidesandrawchestnutpolysaccharideswerepared.Thefourfactorswereanalysedbetweenulletrasonicandcelluloseenzyme,andthetwomethodswereoptimizedusingfourfactorsandtherelevels.Theresultsshowedthattheoptimalconditionofultrasonicextractionwasextractingfor45minunder70℃and70%ethanolwiththemassratioofwatertomaterial1:35(g:mL).Theyieldofpolysaccharideswas11.634%undertheseconditions.Theoptimalconditionofcelluloseenzymeextractionwasextractingfor120minunder50℃andpH8with1.5mg/mLcellulose.Theyieldofpolysaccharideswas12.131%undertheseconditions.Theresultsofexperimentindicatedthatcelluloseenzymeextractionissuperiortoultrasonicextraction.
